Visual examination
Brilliant clarity, pale straw yellow colour with delicate golden highlights. The perlage consists of numerous, fine and persistent bubbles that rise in a steady stream - an indication of meticulous re-fermentation in the bottle and prolonged ageing on the lees.
Olfactory examination
Decidedly intense, broad and of excellent quality. The aromatic profile opens with fresh white flowers such as white rose and jasmine, followed by white peach, grapefruit, pineapple, pear and banana. More subtle layers reveal chamomile, hay, white pepper and refined autolytic notes of yeast and bread crust. The bouquet is structured, elegant and harmonious.
Taste-olfactory examination
Dry, warm and smooth, with a clear freshness and well-defined savouriness that bring balance to the structure. The aromatic intensity is pronounced, the persistence long and the overall quality excellent. Full-bodied and consistent with the olfactory profile, it expresses clarity and precision. Harmonious integration of all components.
Food pairing
Exceptional with seafood crudités, amberjack carpaccio, seared scallops, delicate risottos, aromatic vegetarian dishes, soft mature cheeses and fine Asian or fusion cuisine.
